Ingredients:
Oil for frying
Onions
Lentils
Courgettes
Carrots
Add any veggies you have
mushrooms minced (Blend in a blender or chop small)
Small Soya chunks (pre-soaked in Soy sauce)
Red wine
Tomato paste
Tomato juice
Guido’s Spice Corner Baharat Seasoning
Salt
Eggs (or ground flax seeds)
Rice (Parboiled)
Water
Fry the onion with some Baharat Seasoning - I use about 2 to 3 tsp, add the veggies ,chop them small , add the lentils wash them beforehand and the minced mushrooms, add a glass of red wine, add the tomato paste and mix all together; add the tomato sauce , add salt (a bit extra) remember you are adding rice to this and let all cook till soft, you might need to add some water.
When that is ready you need about 2 to 3 mugs of parboiled rice, it is up to how much sauce you have and how big your dish is, and double the amount of rice in water (if using 2 mugs of rice put 4 mugs of water) Put in a dish and add the sauce and mix. Mix about and add 4 eggs (or 3 tablespoons of ground flax seeds) and add to the dish the rice has to be covered mix gently and place in the oven for about a hr at 180c
Ready to serve... but leave some for latter and pan fry it in a bit of oil - my all time favourite!!
